YUMM CHA has been selected to participate in the Tea Sunday program for the 2024 Berlin Tea Festival. We will present our exclusive selection of rare and exceptional aged teas carefully stored in Taiwan and Guangdong, the largest (aged)tea consumption regions globally and where the project's owners are based.
During the tasting session, participants will savour a range of exceptional teas for those aged 10-70, unavailable elsewhere.
Curated teas during this program (at least 4-5 teas included):
- Silver Needle 2019 (Bai Hao Yin Zhen): This white tea is ideal for consumption after 3-5 years. It tastes very different than its new harvest. Perfect for the start of this remarkable journey.
- 15-year-old Keemun Congou Aged Black Tea offers unmatched complexity and a rich aroma. It's the most loved aged tea from our collection. OR: 10-year-old Aged Jin Xuan Black Tea offers a unique iced tea-like undertone.
- 25-year-old Frozen Summit (Dong Ding), an Aged Medium-Roasted Oolong Tea

Why Aged Teas Special?
1. Transformation of Flavours
The ageing of teas results in a transformation of flavours. Over time, they have less prominent scents than their new harvest but have much more decadent layers in taste- the teas also become smoother, with less astringency, and develop earthy, woody, and even medicinal or herbal notes.
Different storage conditions (temperature, moisture) and the quality and processes of the origin teas, like the level of roasting and oxidation, play a key role in their flavour transformation journey.
2. Beauty without Human Disruption
Before aged teas became real popular among connoisseurs about 10-20 years ago, in the past, there was no intentional effort to age teas (except for the post-fermented teas like puerh), so the true aged teas were stored in a quiet condition without human touch and any additional processes, making their extraordinary taste a happy accident. Due to the original quality and storage, an excellent transformed taste is a prized possession. Some new methods have been developed to make the younger teas taste more aged and accelerate specific signature notes to sell them at a much better price. We will taste the naturally aged teas during the session and explain their difference.
